Food is known to be a wonderful uniter—in the face of complex politics, unique identities, and varying worldviews, a great meal is often thought to be capable of bridging divides and bringing people together. The chef James Beard himself famously said, “Food is our common ground, a universal experience.” But to agree with this statement is to erase all of the ways that food can be anything but universal.
